Inspired by authentic German Potato Salad, this recipe gives a slight modern take to the traditional recipe by using a balsamic dressing for a twist.
Boil 1-2 lbs of new potatoes in lightly salted water – let cool.
Slice & toss potatoes with about 1/2C Balsamic Honey Mustard Vinaigrette
Add in 1/2C diced celery and/or 1/4C chopped onion if desired.
Serve warm… or refrigerate & serve cold… either way, it’s “unforgettable”
